Gluten Free Shortbread

Gluten Free Shortbread

Serves 20

250g butter, melted
¼ cup castor sugar
⅓ cup corn flour
⅓ cup icing sugar
½ tsp vanilla essence
2 ⅓ cup plain gluten free flour

Sift corn flour and icing sugar into a bowl.
Add castor sugar and mix.
Add melted butter and vanilla essence and mix until thick and creamy.
Add sifted flour and mix well.
Press into well-greased try and cut into fingers or shapes.
Bake at 180°C for 30 minutes.
